Baked Fish with Spinach and Tomatoes

Prep Time: 5 minutes

Cook Time: 18 minutes

Ingredients:

  • 1 6-ounce bag of baby spinach
  • 4 white fish fillets
  • Freshly ground black pepper
  • 1-2 slices tomatoes
  • 1/4-1/2 cup crumbled feta cheese

Preparation:

Preheat oven to 375 degrees. Rinse spinach and place at the bottom of a glass baking dish. Season fish fillets with freshly ground black pepper. Lay fish on top of spinach. Place slices of tomato on top and sprinkle with cheese. Bake for 15-18 minutes.

Serves 4.
